Poached Pear Raspberry Oatmeal

Last week's salted cardamom apple oatmeal made me hungry to experiment with more oatmeal recipes. A very ripe pear, The Breakfast Drama Queen's fruit cooking technique, and the discovery of raspberry extract in the cupboard served as inspiration for this bowl of oatmeal.




Tender pears, creamy oats, and the fresh taste of summer raspberries. Mmm!

Ingredients


For the poached pear:
1 ripe pear, diced
1/4 t cinnamon
2 T water

For the oats:
1/2 c rolled oats
1 c water
1/2 t raspberry extract

Directions:


1. Combine pear, cinnamon, and water in a small sauce pan. Cook until liquid reduces to a thick syrup and pears are tender.
2. Remove pear and any remaining liquid from pan. Add water and oats.
3. Bring water and oats to a boil and reduce heat to medium.
4. When oats reach the desired consistency, stir in the raspberry extract. Add the pears to the oats and mix.
5. Transfer oatmeal to a bowl and dig in.
