My stepsons love hummus and they had a roasted red pepper soup once that they loved (they hate tomatoes so they were thrilled by "non disgusting tomato soup"). I think the hummus red pepper soup just might be a winner in this house. But it's different...I'm flipping a quarter on whether I will make it or not. Believe me if it was just me, I would have made it already.
ReplyDeleteHow was the protein pizza? I made a yogurt crust once that was pretty decent.
The soup was to use up hummus from last week. The rice was nice to bulk it out. (This was my husband's lunches this week.) I was skeptical about the pizza dough, and it did turn out cracker-y where it did not have sauce, but the flavor was excellent. For a fast pizza meal, it was great!
